Hemp & Banana- possibly two of my favorite foods. Banana being full of several vitamins and minerals, especially potassium, vit B6 and vit C. Hemp is in a league of it’s own… an amazing source of protein, omega 3 & 6, rich in essential fatty acids, vitamin E, magnesium, calcium, zinc and iron. Hemp can help improve digestion, PMS symptoms (physical & emotional), skin conditions, reduces sugar cravings, cleanses the colon, boosts the immune system… I could go on all day about how great hemp products are, But let’s get to the reason why you are here!
I received an order from my favorite brand ‘Hemple’ the other day and had a couple of borderline compost Bananas, so I decided to combine the two and create Hemp Banana Bread!
2 or 3 medium sized Bananas
2 cups Gluten Free Flour
1/2 cup Rapadura or Coconut Sugar
1/2 cup Hemp Seeds
3 tbsp. Hemp Protein (optional. could use flaxmeal or leave out)
2 tsp Baking Powder (gluten free)
1 tsp Bi-Carb Soda (aluminium free)
1/2 tsp Salt
3/4 cup Coconut Milk (could use any dairy free milk)
3 tbsp. Coconut Oil – melted
2 tbsp. Hemp Oil (optional)
1 tsp Apple Cider Vinegar
1 tsp Vanilla
Pre-heat oven to 180C and line cake tin with baking paper or oil.
In a large bowl, combine all dry ingredients except hemp seeds. In another bowl combine all wet ingredients, then mix in mashed banana.
Add wet ingredients to dry and gently fold until just combined, add in hemp seeds and fold through.
Pour mixture into a cake tin, spread out gently and top with extra hemp seeds. Pop into oven for approx. 1 hour or until skewer comes out clean, check after about 45 minutes.
Allow to cool before cutting… not that I could wait that long, it is just a little hard to cut while warm.
Top with vegan butter, nut butter, coconut yoghurt, berries, or eat as is… Soooo tasty… and healthy!
