I love making bliss balls because they are cheap, quick, and taste damn good. You can add whatever ingredients you have in the house and they always seem to work!
Here is my ‘date free’ citrus bliss ball recipe that I created for a workshop I ran with ‘Small Change Big Change’. I always double this recipe because they last really well in the freezer. These balls are the perfect afternoon treat or if you have last minute guests- just pull some of these bad boys out of the freezer, let them sit at room temp for 15 mins or so and then dig in! My partner Leigh eats most of my treats frozen and still things they taste great!
1 cup Almonds or Cashews
3/4 cup Desiccated Coconut
2 tbsp. Liquid Sweetener (I use Maple Syrup)
2 tbsp. Coconut Oil – melted
2 tbsp. Citrus Juice (you can use a few drops of essential oils if you don’t have any fresh citrus in your house)
Citrus Zest to taste
Sprinkle of good quality Salt (brings out the flavor and is a natural preservative)
In a food processor (or nutri-bullet) blend nuts until small pieces- not too fine, not too chunky or your balls won’t bind.
Add 1/2 cup desiccated coconut, blend until combined
Add in sweetener, citrus, oil, salt & vanilla
Blend together (or mix in bowl if you do not have a large food processor), once mixture has come together- roll into balls, and then coat in remaining desiccated coconut.
Refridgerate/Freeze until set
